left overs will remain leftovers unless you have something to mix them with
keep stuff in stock - you don't have to go to the supermarket this minute and buy it all but keep at least some of these in stock ready to turn the leftovers in something lovely to eat


IN FRIDGE  
mayonnaise
butter
gherkins
capers
bottled lemon juice
parmesan cheese
pesto 
harrissa paste (in tube North African wet spices)

IN FREEZER   
block of puff pastry & shortcrust pastry cut into 4 and re wrapped, frozen in smaller pieces so  you can then use a little at a time – a pasty for one, a little pie for 2!  
filo pastry packet  
peas
broad beans
soya beans
leaf spinach or chopped if not 
ice trays ready to fill with little bits of stuff
left over cream from a carton poured into ice trays so you have a little to add to a soup in an instant

IN CUPBOARD  
tinned chopped tomatoes 
tomato puree  
tuna in sunflower oil  
kidney, white & butter beans 
chickpeas  
basmati and risotto rice  
pasta - various types  
couscous/bulgar wheat (courser and I think nicer than couscous)  
block ready to use polenta  
grey/green lentils (Puy style)
tinned eazy onions (these FAB chopped Spanish onions cooked slowly in olive oil – once opened store in fridge)
brinjal pickle (aubergine pickle – perfect for instant flavour)
flour plain and SR
chickpea flour (gram)
cornflour

Garlic – look out for jumbo bulbs – they are much easier to deal with
