left over Xmas pud - little strudel parcels

If I told you that the recipe for these wonderful little strudel puddings means marinating gorgeous raisins and dried fruits in molasses, sugar and a generous amount of alcohol for months on end you would tell me that you do not have time to make them, your lifestyle does not allow for that sort of cooking -  but that is exactly what is waiting for you in the fridge on boxing day. That 1/2 eaten and much maligned pudding that we all feel obliged to serve but few of us adore. So don’t look at that Christmas pud as a sad but inevitable left over from Christmas day but look again and see ready prepared delicious ingredients just waiting to turn an ordinary apple into a lovely little pudding in a matter of minutes...................................

Little strudel puddings
Serves 4
Oven temperature 375F/190C
Cooking time 30 minutes
Preparation time 10 -15 minutes

Ingredients
4 small eating apples – peeled
6 dessert spoons of left over Christmas pudding
Good pinch cinnamon
1 tablespoon brown sugar
Extra glug brandy or calvados
50g butter – melted
8 small or 4 large sheets filo pastry

1)       Using an apple corer remove the apple cores – use the corer a couple of times to make the central hole larger.
2)       In a bowl mix the left over pudding with a little extra alcohol, cinnamon and brown sugar. Push this mixture into the hole in the apples.
3)       Lay a sheet of filo on a clean work surface and brush with butter, lay second small on top or fold over the large sheet and put the apple inthe middle. Bring the sides of the filo up to make a little parcel and brush all over with butter
4)      Bake  uncovered for 30 minutes and serve dusted with a little icing sugar

Fab with brandy butter or icecream


You don’t have to serve this straight after Christmas but freeze that left over pudding and serve this to friends on a cold wintery January night.
